  1. it’s possible that you used too much water for the rice? i believe most types of japanese rice require 1:1 (1 cup of water per cup of rice) water portions? you probably didn’t undercook it but made it soggier. lower quality rice or glutenious rice are meant to be cooked with more water.

    undercooked rice will end up being semi crunchy or hard.
