Yesterday I made bamboo shoot rice but with chicken stock instead of dashi. It turned out surprisingly okay, but there wasn’t nearly enough flavour without the dashi. Maybe if I used more concentrated chicken stock…

  1. That actually sounds really good. I’ve never had dashi before, but you could probably add some other seasonings to add some flavor.

    1. I recommend making Takikomi Gohan. Basically rice, dashi, soy sauce, mirin, chicken stock, and toppings of your choice (Bamboo, carrots, and mushrooms are good)
